Mascarpone Vanilla Bean Cheesecake

Ingredients

  • 2 cups graham cracker crumbs (or digestive biscuits)
  • 1/2 cup melted butter
  • 2 tbsp sugar
  • Pinch of salt
  • 16 oz cream cheese, softened
  • 8 oz mascarpone cheese
  • 3/4 cup sugar
  • 3 large eggs
  • 1/2 cup sour cream (or heavy cream)
  • 1 vanilla bean or 1 tbsp vanilla bean paste
  • 1 tsp vanilla extract (optional)
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix graham crumbs, sugar, salt, and melted butter.
  3. Press firmly into a lined 9-inch springform pan.
  4. Bake crust for 8–10 minutes, then cool.
  5. Reduce oven temperature to 325°F (163°C).
  6. Beat cream cheese and sugar on low until smooth.
  7. Add mascarpone and mix gently until combined.
  8. Mix in sour cream, vanilla bean/paste, extract, and salt.
  9. Add eggs one at a time on low speed, mixing just until blended.
  10. Wrap pan in foil if using a water bath and place in roasting pan.
  11. Bake until edges are set and center slightly jiggles.
  12. Turn off oven, crack door, and cool inside for 45–60 minutes.
  13. Cool at room temperature for 1 hour.
  14. Chill for at least 6 hours or overnight before slicing.

Notes

Mix gently to avoid air bubbles, bake low for even texture, and cool slowly to prevent cracks. A water bath gives the best bakery-style finish.
